The biggest thing people will ask on the blog or via email is about what to eat! That is hard question to answer. We know what to eat, but it is actually getting the good food, having it ready and eating it! So I think figuring out quick, easy, and healthy meals is key! Today I whipped up this tuna egg salad. It was tasty, easy enough to make and pretty darn healthy! The only thing I prob could have omitted was the Mayo, but hey it was only 1tbsp and it was organic lol 😉
On the flip side of that I didn’t use any dressing… the bit of mayo and the egg yolks was enough.
Here is what I mixed in:
- 1 can tuna with 1tbsp mayo
- 2 eggs cooked sunny side up
- 1 cup arugala
- 1 cup spring salad mix
- just a sprinkle of sunflower seeds…”yes I said sprinkle”
- a sprinkle of raisins
- some salt, pepper, garlic power… real light
Real simple and it tasted great

- 41 Grams Protein
- 470 Total Calories
